I’m trying to think of a name for this snack. This name comes to mind first: Want Some Strawberries with that Whipped Cream? But, that’s really too long. Strawberry Surprise. Yes, that’s it. Strawberry Surprise. Why Strawberry Surprise? Because there is so much whipped cream that it’s a surprise there are actually strawberries underneath.
I’ve made this treat for myself so many times in the past weeks that I thought it was time to get over my embarrassment and tell you about it.
It looks pretty unassuming, right? Healthful even?
That’s because I’m not done yet.
To get to this point of the “recipe” all I do is clean, stem and quarter fresh strawberries. I dump all of the strawberries in a bowl, add about a tablespoon of sugar, give it a good stir, cover and put it in the fridge. The sugar over time makes the strawberries give up some of their juices making a lovely and yummy syrup.
And now here comes trouble.
I get out the heavy whipping cream. I have been loving heavy whipping cream lately. Jess, I can see why your dad adds whipped cream to everything. He’s well within reason, here.
I measure 2/3 of a cup of heavy whipping cream and add it to my food processer (you could use a blender, too). And this is where I thank my Aunt Tracy and Uncle David for giving us a food processer for our wedding. I didn’t think I’d use it much, but I use it all the time – for this and for lots of other things.
To the heavy whipping cream I add about a teaspoon of sugar and a 1/2 teaspoon (or more, I don’t measure) of vanilla extract right into the food processer.
Then, I pulse and pulse and pulse. I pulse (not for more than 5 seconds at a time) until it actually starts looking like whipped cream.
And that’s all it takes. I spoon the homemade whipped cream onto the strawberries and that’s it! I was doing this for making strawberry shortcake (using Bisquick for the shortcake) until I realized that it was the strawberries and whipped cream that I was really crazy about and even though the shortcake is super easy with a mix, it still took longer… minutes longer, even.
I admit, it’s a lot of whipped cream, but it’s so delicious – I wouldn’t try cutting back. And, just to clarify, this is one serving.
Interestingly enough, I tried adding chocolate syrup to top this off one time, and it didn’t taste nearly as good. Chocolate is my favorite so that’s saying something.
I eat this almost every single day. Sometimes, it’s the only motivation I have for running the dishwasher daily. If my food processer parts are all clean, I can make it again!
I keep the strawberries in the fridge, spooning out portions until they’re all gone and then I have to get to the grocers quick so I can have another batch stewing in sugars for the next time.
This is one thing I love about being pregnant in the summer – the fresh and yummy produce that’s not nearly as good any other time of the year.

Jessie, I have another combination that you might like. Take a package of white chocolate pudding. Sitr in 1 cup buttermilk. Then add 8 oz of cool whip. You can add any mix of fruit to it. Strawberries, grapes, pineapple, apples, peaches. I serve it once and then the next time just add some more fruit if there is any left overs to stretch it for one more meal. My hired men love this and it is also a creamy way to enjoy fruit fresh or fruit out of a can. But it might not motivate you to start the dishwasher! Only one bowl to clean up!

Jessie, I just have to laugh at this, no dill pickles for you. You almost make me drool reading and looking at the pictures. Do you know how big I would be if I ate this every day? To say nothing of causing my doctor to have a heart attack, if I didn’t beat him to it!!
I LOVE strawberries, and bring on the shortcake with it. I think I will have to make a run uptown for strawberries. I have been making smoothies, without sugar, or much, and they are good.
